The cold arrived overnight. Suddenly jumpers make sense, and so does our beef cheek ragu that’s been simmering for eight hours, breaking down until it’s tender enough to coat gnocchi that melts on your tongue. Seasonal mushrooms. Pecorino Romano grated fresh.

The kind of dish that makes you grateful for cold weather, for candlelit tables, for evenings that stretch longer than planned.
