LAST DRINKS AT THE FOUR PILLARS LAB. Today we’re sharing some bittersweet news... we’re handing over the keys (and the lease) of our Sydney Laboratory to our friends at El Primo Sanchez.

We opened the Lab in June 2020 (right in the middle of lockdowns, as you do) as a place to experiment, educate and serve bloody great gin drinks, and over the past five years, we've done just that. If you’ve been in to see us once or twenty times, thank you!

Good times, great drinks and excellent hospitality is what we've always been about, and that’s exactly why El Primo Sanchez is the perfect crew to carry on the spirit of the space. If you’ve experienced a night out at El Primo Sanchez, or any of the The Maybe Group’s other bars, you’ll know they’re the best of the best and we can’t wait to see what they do here. It’s going to be the same lively Mexican bar you know and love, just a little more grown-up (and yes, they're bringing their karaoke room!)

So what now?! Well, we don’t officially hand over the keys until Friday 19 September so there’s still plenty of time for you to get to the Lab and enjoy one (or two) last Tanlines at Eileen's Bar. Stay tuned for what we have in store for the next few weeks. Once the El Primo Sanchez team are in, they’ll take a few weeks to add their touch and doors will re-open early October. And here at Four Pillars, we’re as committed as ever to Sydney and the community we’ve built here. This change allows us to re-direct some of our energy into the great bars, restaurants & pubs the city has to offer and we’ll see you out there for a G&T soon.

We can’t wrap this up without a final note to our legendary team who have made the Lab what is – you’re world class. Thank you.

We love being at the heart of Sydney’s q***r community every day, but Mardi Gras? It’s next-level fab. The Lab will emerge with a glittery makeover from Wednesday 19 February, with an e###tra menu pouring right through to our Pre-Parade Day Party on Saturday 1 March. Four Pillars Gin turns 11 this weekend! Stop by Eileen's Bar on Saturday and we'll shout you a taste of Australian Christmas Gin ('cos what's a birthday without some gifts?). Bloody Pinot Noir Gin is coming back! And to celebrate the gin that sold out in a flash last year, we're co-hosting a one-night-only event with Yarra Valley winemakers and our favourite long-distance neighbours, Payten and Jones on Thursday 15 August. Melbourne Thai institution, Longrain Melbourne is popping up at our Sydney Lab! Join us on Friday 12 July and Saturday 13 July as they take over our kitchen with a menu full of their iconic dishes. Think prawn betel leaf and pulled duck larb alongside drinks like a Modern Australian Gin mango, lychee Lassi.

Any OG Four Pillars fans out there? Well we've got great news. Sticky Carpet Gin has officially hit Gin Shop shelves!

If you wanna know the story behind this one, you can read all about it at Four Pillars Gin. But the long and short of it is Sticky Carpet Gin is one of the most highly requested limited-edition gins from the Four Pillars archives. And now, we're bringing it back for a second limited run!

Made with Little Creatures Pale Ale and hops, this gin is beautifully balanced with a dense canvas of resiny juniper and deep brown spice notes. It makes a cracking G&T with a slice of lime or lemon. And it's yours to take home from the Lab now. Like, right now.

If you like chicken salt on your chips, then this drink is for you. Winner Winner is close to a dirty Martini, made with Olive Leaf Gin, Fresh Yuzu Gin, watermelon rind, chicken salt and pickle brine.

The best part? The rind is a byproduct of our watermelon Highball, Lipsmacker! Pretty cool, huh?! Here for just a few more weeks while the Autumn menu is loading...
