A trip to the Hebrides 🏴󠁧󠁢󠁳󠁣󠁴󠁿

Isle of Raasay Dùn Cana (52% ABV)
Peated and unpeated spirit, first matured in American rye casks before a second maturation in Pedro Ximénez and Oloroso sherry quarter casks. Peppery spice, dried sultanas, roasted nuts, and vanilla, finishing with salty chocolate and a light wisp of wood smoke.

Laphroaig "Willem by Willem" (53.7% ABV)
A genuinely unique one — a 14 Year Old Laphroaig hand-selected by actor Willem Dafoe alongside Senior Wh**ky Maker Sarah Dowling, finished in Oloroso sherry casks. Rich caramel, dark dried fruit, and red currants up front, balanced by medicinal ash, sea salt, black pepper, and charred oak. Bold, syrupy, and genuinely cask strength.

Ardbeg Dark Reserve (49.4% ABV)
A marriage of wh**ky wholly matured in black sherry and classic Ardbeg bourbon casks, then finished in black sherry casks. Treacle toffee and dates give way to walnuts, ginger, and woodsmoke, with a lingering finish of molasses, clove, and smoked paprika.

Highwayman Tasting "Metal & Malts"

Highwayman is the hard work and lifelong commitment of Dan Woolley. Dan has been one of the modern day faces of wh**ky over the last ten years, holding one of the most sought after Wh**ky Ambassador roles in Australia. Throughout this role he travelled countless hours, covered thousands of highway miles with a bag full of wh**ky, educating wh**ky lovers – He was the Highwayman of Wh**ky. This role gave him a backstage pass to globally renown distilleries throughout Scotland (especially Islay), Kentucky, Tasmania and Japan. These journeys developed a deeper understanding of production and a big love for maturation of wh**ky.

In 2016 Dan started to lay down his own sprit in his chosen casks, collecting the first dozen batches from favourite distillery locations around Australia. He sent them on the highway to coastal Byron Bay, NSW, their new home (and his) where they matured while Dan started acquiring the equipment he needed to produce his own spirit. In a dream come true with an alignment with Lord Byron Distillery, on his own still he started to produce his own spirit in 2018.

In mid 2020 he launched Highwayman - his life’s work in a liquid library for all to share. The first few releases were whiskies that were distilled at other distilleries but based on Dan's specifications. In 2021, he finally released whiskies that were 100% distilled by his own hands, on his own stills, as well as fully matured in Byron Bay!

In this tasting, we will be tasting some of his most recent releases matched with some classic 70's and 80's metal tracks!

Halloween tonight, Derby Day tomorrow, and the Melbourne Cup Carnival kicking into gear — whatever you're doing this weekend, we've got the wh**ky (and rum) to match. 🎃🏇

1) Lark Rare Seppeltsfield Apera Cask Matured II for The Wh**ky Club, 49%
A Wh**ky Club exclusive from Tasmania's original pioneer distillery. Matured in ancient first-fill Seppeltsfield Apera (Aussie Sherry) casks up to 80 years old. Walnuts, caramel fudge, dried apricot, and roasted almonds — big, bold, old-school Lark.

2) Egan's Conviction 10 Year Old, 46%
An Irish single malt and single grain blend, finished in XO Cognac casks. Honeyed orchard fruit, toasted oak, and dried apricot on the nose; silky, with sultana, almond, and ginger spice carrying through to a long, warming finish.

3) Adelphi Selection Diamond Guyana Rum, 2010/2023 13 Year Old, 61.3%
A single cask from Guyana's historic Diamond Distillery — just 241 bottles worldwide. Tropical mango, passionfruit, and banana on the nose, with white pepper, raisin, and stewed fruit underneath. Serious, funky Demerara character at cask strength.

1) Old Pulteney Handfill 1997/2017 19yo Bourbon #1522,58.4%
Distilled December 1997, aged 19 years in a bourbon cask ans bottled about 10 years ago, at the distillery. Vanilla ice cream, and cream fudge on the nose; full-bodied and oily with notes of vanilla and runny honey, finishing long and sweet.

2) Benromach for The Wh**ky Club Golden Promise Edition 1st Fill Sherry Casks 13yo, 46%
Manuka honey, treacle, and rich fruit cake on the nose; thick and creamy with sultana, raspberry, and waffle cone, finishing on campfire marshmallow and hazelnut affogato.

3) The Wh**ky Club Blended Scotch Wh**ky 20yo Sherry Butts & Hogsheads Bottled April 2026, 44.4%
A one-off high-malt blend assembled in 2017 from a legendary unpeated Islay distillery, three Speyside sherry powerhouses, an unnamed Islands distillery, and Lowland grain — then left to marry in sherry butts and hogsheads for 8 more years before bottling. Butterscotch pudding, cinnamon, and soft oak on the nose; poached pear, hazelnut, and creamy milk chocolate on the palate.

The pinnacle of the Waubs Harbour range — drawn exclusively from their highest-rated ex-Tawny Port casks. Dark fruits, brown sugar, and maritime air on the nose; sultanas, orange peel, and sticky date pudding on the palate, finishing long and gooey with salted caramel.

Waubs Harbour Salt Marsh Edition 2 (Sherry/Light Peat) 690 Btls, 47.8%
A sherry cask, lightly-peated single malt made using local salt marsh peat, hand-dug just down the road from the distillery — a world away from classic highland peat. Honeycomb and vanilla on the nose, with a subtle, nutty, brown-sugared smoke running through caramel sauce. Billed as "the peated wh**ky for non-peated drinkers."

About Angus MacRaild:
Angus MacRaild is one of the wh**ky world's most respected writers, independent bottlers and wh**ky personalities. A regular contributor to the legendary Wh**kyfun.com alongside Serge Valentin, Angus has built a reputation for his exceptional palate, encyclopaedic wh**ky knowledge, sharp wit and love of old-school Scotch wh**ky.

Angus is the founder of Decadent Drinks, the independent bottling company behind cult-favourite ranges including Decadent Drams, Wh**kyland, Equinox & Solstice, and Old Orkney. He also works as an expert tasting panellist for The Scotch Malt Wh**ky Society (SMWS) and regularly stirs the pot with his hilarious wh**ky satire blog, Wh**ky Sponge.

If you haven't tried Chinese single malt yet, now's the moment. We've got three expressions from Laizhou Distillery, out of Qionglai, Sichuan — a region the founders built after visiting over 100 distilleries worldwide, now home to China's largest single malt wh**ky distillery. 🇨🇳

1) Laizhou Sherry Harmony Small Batch No.2, 9999 Btls, 53%
A blend of 10 different first-fill sherry-style casks — including Fino, Amontillado, Oloroso, Pedro Ximénez, Moscatel, and Palo Cortado — all in one glass. Raisins, dates, and butterscotch on the nose; treacle, dark cherry, and caramelised sugar on the palate, finishing long with brown sugar and dried fruit.

2) Laizhou Fino Sherry Cask, 46%
Matured in first-fill Fino sherry casks certified under DO Jerez. Cinnamon, cedar, raisin, and salted plum on the nose, leading to caramel, licorice, and warming wood spice.

3) Laizhou Peated Single Malt Bourbon Cask, 50%
Soft wood smoke, vanilla, malted cereals, and fresh orchard fruit on the nose. Clean, warming, and remarkably approachable — the smoke fades slowly into malt and vanilla.

The entry point to the Van Winkle family — but don't let that fool you. Rich caramel, oak, and that signature wheated-bourbon smoothness Pappy is famous for.

2) Van Winkle Special Reserve "Lot B" 12yo Kentucky Straight Bourbon (2025 Release), 45.2%
Softer and more refined, with notes of honey, vanilla, and baking spice layered over a decade of oak influence.

3) George T Stagg Kentucky Straight Bourbon (2025 Release) 15 years 4 months, 71.4%
A genuine "Hazmat" bourbon — the highest proof Stagg release in its history. Aged over 15 years, uncut and unfiltered straight from the barrel. Dark chocolate, black cherry, molasses, and seasoned oak, finishing in the legendary "Kentucky Hug."
