Most distilleries make their alcohol in tall, steel fermenters. Not ours though - we use Brewbacca.
'Brewy' is a charred oak ex-wine fermenter, which spent a decade in the wine industry before it came to us. When we use Brewy, our wort (whisky) isn’t just fermenting - it’s breathing.
A big, heavy wooden tank is harder to maintain - believe me. But it’s also alive in a way that steel never will be. The wood helps us get deeper, juicier flavours into the whisky. That's why they've been used in Scotland for over 200 years. They make whisky great.
Brewy isn’t just a container - it’s a collaborator. As each new ferment soaks through the wood, Brewbacca will help us develop a signature ‘McMullen’ flavor.
