Let's envelop ourselves in a half bottle carafe ($25 every Wednesday) of Hearhcote's finest. The Jura (Alpine France) grape Troussea, like a bridge between Bugunday and Chateuneuf-du-Pape. Sunshine needs Txakoli!

And Tidy Town W**es have got this absolute peach of a version.

A specialty of Basque country in Spain, this Victorian take zips along with pink lady apples, a hint of pear, stonefruit, a thin verdant line of snowpeas, fresh thyme, and (now for some supreme w**e w**k) bouncy acidity. It's super light, bright, tingly and vibrant as buggery.

Come grab a half bottle carafe, $25 every Wednesday first any w**e, perhaps a little cheese (Yarra Valley Dairy chevre the perfect match), and luxuriate in the courtyard sunshine.

Rizza!

Biodynamic and organic Riesling from Rheinhessen, Western Germany, near Kaiserslauten/Frankfurt.

Bu**er me, Rizza is good! The absolute Queen of white grapes for me.

This has that crunchy red apple vibe, juicy, crisp and clean, with a lick of slate. Wonderful perfume on the nose too, white petals, waxy honeycomb.

I travelled up the Rhine, through this area, from Stuttgart to Köln, after the Australia v Croatia game at the 2006 World Cup. Stayed in a town called Bacharach, I had to, dined on venison and spàtzle, with some Spàtburgunder (Pinot), and, of course, Riesling. Glorious.

Best play some Burt Bacharach tonight. Dreamy.

We do, however, have a Rizza v RZA event in the pipeline, so stay tuned.

Keeping it fresh, light and clean, Pisco is floral, rose petals, a touch of guava. A healthy dash of Bordeaux's Lillet Blanc, so, like concentrated Sauvignon Blanc, lashings of passionfruit. Boost that with a touch more fruit syrup, some zingy lime, lots of soda, for a tall, refined, thirst crusher

Aviation Spritz!!

Gin, violet liqueur, maraschino liqueur, sparkling w**e, soda.

There's a summery tingle in the air!

It's a'comin pals!

Ergo, some bloody Spritz!

A longer version of the classic cocktail. Wonderful aromatics, allowed to breathe and luxuriate in sparkling and soda.

The courtyard is looking wicked thanks to Mcnuttndorff Landscapes, the pool table is FREE, and on Spritzy Saturdays these are just 12 clams until 6pm, jugs of the same on Pitcher Perfect Sundays $40.

Sun is shining, the weather is sweet...

Just back from a restorative trip to Cairns, and brought back some friends!

Devils Thumb Distillery Reserve Cask is one of the best Rums I've tasted. Aged in Sherry casks, this is juicy, nutty, and the finish lingers for days.

Burdekin Rum is akin to Rhum Agricole, free run sugarcane juice spirit (like Cachaca) aged in Pedro Ximenez (PX) barrels. Savoury, funky and very floral. With the prettiest label to boot.

KALKI MOON DISTILLERY Gin from southern Queensland,a lovely London Dry style, but it's all about the infusion. Found some jaboticaba berries/fruit at Rusty's Markets in Cairns. Never heard of it before, so had to try it. Brazillian fruit originally, grown locally. Looks like a black grape, tastes like across between a grape and a lychee. Needed to bring it back across state lines. B**g it in Gin, the only way (perhaps my epitaph). The juicy fruit has really come through, along with the amazing colour, like sloe berries. Great tall with Sonic, or in a pretty Vesper.
