The mandarin peel from trees in our new gaff in St Albans! Very fragrant.

Whatever it's called, it's an absolute bloody ripper! Fresh, spicy, smoky, exhilarating.

Ooohhh, just so thrilled by this, one of my best creations.

Was struggling with a name, and Wiley's seminal track kept buzzing in my head (Garage? 2-step? Urban?), so let's go with this.

Perfect for this most Melbourne of days. Refreshing, juicy, floral, with a little bitterness and spice. Like many of my favourite people.

A touch more refined than the "steal h***h from your parents' liquor cabinet" Long Island Iced Tea, and wee bit less sledgehammery.

The Rum Hustle!

Housemade Spiced Rum, spiked cherry juice, ginger, pineapple, lime, soda.

Light and refreshing, delicate enough to let the spice and fruit dance across the palate.

Our housemade Spiced Rum (Spice Girl) is an absolute wonder, but the key is really our spiked cherry juice, which comes from our cocktail cherries. Fresh Yarra Valley cherries are soaked in Slivovica (plum Brandy), Luciano Amaro and a little sugar. Fortifies the cherries for garnishes, then leaves us with this lovely liquor akin to a cherry Vermouth.

Caribbean vibes with a little Gypsy flair.

The name Rum Hustle comes from London in the 1700s. A giant concrete wheel would be pushed down the road, and Indiana Jones style (or Bluey playing Raiders), everyone would leap out of its path, aghast. Pickpockets would then get to work, giving their marks "the Rum Hustle".

The soundtrack for me today would be Solange - "Losing You" with Devi Hines, or his first Blood Orange album

Feels Vivify, Cocchi Vermouth, Campari

Gin is subbed out for the coconut, ginger, and galangal vibes of the Feels, with the richer Vermouth, the perfect accompaniment to a blustery, chill filled Melbourne summer's day.
