It’s all gone Petit Manseng! Our top boss Ruby with the bottles for this Tuesday. Only gems.

- 2023 Lajibe ‘Serres-Seques’ Petit Manseng (sec/dry) - $39

- 2022 F***y Sabre ‘Cuvée Anatole’ Pinot Noir - $24

Lajibe (Jean-Baptiste Semmartin) in the meta with lots of hype around Insta (wine jocks et al). Jurançon getting more time in the sun, particularly Petit Manseng, being the grape here, a tropical explosion.
And from F***y, with love. We haven’t opened this particular cuvée before, Sue and Rodger’s wonderful notes tell us of a juicy, wild-strawberry party for your palate. Burgundian girl power!

An ongoing by the glass tradition. Limited. 100ml pours. BYO welcome w/ corkage.

- 2023 Envinate ‘Taganan’ blanco - $25

An undisputed master of Sav B’ applies heart and mind to rosé, alongside Canary island cult exotics with a volcanic masterclass. Closing in on Spring.

BYO Tues evenings w/ $25 corkage, ‘Noble pours’ are limited and at 100ml.

PS: Jay rolling up sleeves more in our wine game for a wee bit, whilst Luka heads off to pick grapes for Lapierre over the next few months (on the proviso he brings us back a few bottles of his immaculate Beaujolais!).

Got you covered. Rain, curated records, rare gear by the glass, considered cuisine, serious cocktails - all run by a highly skilled, passionate and lovable team. The sum is truly greater than its parts. More special bottles opening up this evening for the epicurious:

- 2024 Jessica Litaud ‘Mâcon-Fuissé’ Chardonnay, Bourgogne - $30

Mee and Jessica, amongst the growing wave of women making some of the most exciting wines, providing superb offerings in their own regard. The Saint Pierre being a truly remarkable expression of Savagnin. We opened a bottle recently with Luka and ascended into bliss. Still haven’t come down.
It’s Tuesday and we continue to open cellar gems. We’re loving the opportunity to do this and those coming in week by week to enjoy with us. You’re welcome to BYO bottles too w/ $25 corkage. The special wines are limited and we’re pouring them at 100ml. A few additional special ones up on the board too.

In pictures: Michat performing any role that needs to be done. Us waking up Luka Apps in his temperature-controlled bedroom to pick wines for the evening (it’s kind of like Harry Potter, except Luka isn’t a confirmed wizard and the magic lives within the bottles)… Oh, and a goddamn ‘09 Dauvissat Grand Cru Chablis opened by a generous customer on the weekend. Rest assured these tubes have great provenance and this bottle was a screamer!

For tonight, our Tuesday’s leaning into particularly wonderful bottles - Margot has picked a bottle of 2021 François Chidaine ‘Clos du Breuil’ Chenin Blanc - $28

No intro needed for Chenin die-hards. Classic, terroir driven rippers always a given from the ‘Pope of Montlouis and Vouvray’.

The hits continue. Opening up this evening the following wines by the glass. Seen in Cam’s trusty hands:

- 2022 By Farr ‘R.P.’ Pinot Noir - $40

- 2021 Jean-yves Peron ‘i vicini’ - $30

- 2015 Selbach Oster Schlossberg Auslese Riesling - $32

A premium cuvée, with some age, from one of Australia’s (Victoria) best Pinot Noir producers. A cult ‘travelling’ natural wine maker who doesn’t define himself by place, and a legendary Mosel producer. Can’t wait.

Don’t ever forget I’ll always love you (Defialy).

We’ve swum through the most beautiful week. Kicked it off with Micah and Angus showing the Wax gang around the wonderful farming that goes into producing D E F I A L Y wines, including a very cute lunch together amongst the barrels + their extra special Vin Jaune - Thank you boys! The evening was followed on by Margot and Cam throwing down cocktails and tunes at Babines | Melbourne Cocktail Bar & French Bistro 2nd b’day (sore head material, with love as always Julien x2).

Chef Michael threw on some French dishes on Tuesday for La Fête National (with help from ex-Wax, still-French Matias, merci mate). Plenty of our beloved rolled in BYO-ing rediculous wines. Of special note a 2010 E. Guigal Ermitage Ex-Voto held hands in sensual dance with Boeuf Bourguignon. Sometimes 1+1 can equal more than 2.

A few new dishes on too - The chicken parfait is awesome, a wintery Lamb Rump with Cannellini beans and also South Aus Pippi’s cooked down in Manzanilla.
