Tuesday nights continue as a tradition to drink special wines by the glass at Waxy - w/ BYO wine also on option - Luka (with big grin) has dug out two exception bottles from the cellar for tonight:

- Yvon Clerget’s Bourgogne Blanc
- Alice & Olivier De Moor Bourgogne Blanc ‘Chitry’

Both 100% Chardonnay and from the excellent 2022 Burgundy vintage. A worthy comparison of old and new-age procurers. They’re also incredibly sought after given tiny yields and global demand. Oh, and they’re bloody delicious!

…$28 a glass!

Limited to 1 glass per customer, 100ml pours, and of course you’re to BYO wine tonight w/ $25 corkage.

Hello world.

Prawn special on tonight - Gambas Pil Pil with local produce, fermented chilli and confit garlic. Limited.

Also on le menu: a 350gm Lamb Barnsley chop with Days Walk Farm puntarella alla romana.

Our wonderful tree out front is slowly becoming more naked, with one final show of fiery leaves ahead of the solstice.

And finally - curation for NGV Friday Nights kicks off this evening as part of the Cartier exhibit. Go check it out if you’re about the big smoke. Otherwise, swing by and let us fulfil your desires.

Tomorrow night, our Sommelier Luka is opening some particularly exciting wines by the glass - a tradition we’ll continue every Tuesday, alongside the option to BYO with $25 corkage.

Bruyère & Houillon Arbois-Pupillin Rouge 2020. Very rarely seen on wine lists, let alone available by the glass (especially with a few years age) - We expect this rare beauty to go quickly, a special expression of red Jura grapes, “ethereal” is the word that comes to mind. Thank you as always to Sue & Rodger of Living Wines for the bottle. $32 per glass.

Joseph Colin Bourgogne Aligoté ‘Les Jardins de la Côte’ 2020. A pure and pretty expression of the varietal. Great value from this tightly allocated producer. $24 per glass.

Limit 1 glass per customer. 100ml pours. Feel free to request wine’s you’d like to try by the glass for future Tuesdays in our DM’s. Also see photos for current by the glass list.

Tuesday nights at Wax will now be home to two wine-friendly traditions:

(1) Noble and rare wine by the glass from our Cellar.
Each week we’ll open something wonderful and limited by the glass at a compelling price. Thinking of hospo folk on a night off, it’s a chance to try something pretty special without committing to the whole bottle.

With Jura currently in focus, tonight we’re pouring: 21’ Labet “En Chalasse” - $26 / 100ml (1 pour per guest)… IYKYK

(2) BYO Wine Tuesdays.
Bring a bottle and enjoy it with $25 corkage - We love venues that make space for people to share great bottles from home, so we figured Tuesdays at Wax should too.

Our full kitchen offering there to support! Bookings always recommended. Records will be curated by our team these evenings.

Mysterious Jura.

Rolling hills, tiny villages, candlelit dinners with Comté and mysterious wines. Rustic, understated, and perhaps less trodden than its neighbouring wine regions… yet with its own devoted cult of followers, especially among those chasing the region’s sparse wines.

Our new wine menu is now live! Over five years in the making for this current iteration. We’ve capped it whole at 200 bottles (not an easy task), while continuing to rotate highlights focused on particular regions, producers, themes, with new and old nobility.

Right now, we’re sharing some highlights from our own experiences discovering Jura: wines with a profound sense of place, best pondered slowly over a long sitting with good company, mutually unwinding.

…and of a side quest…

On a trip south to north through France in September 2021, two enthusiastic idiots were lucky enough to spend time travelling through Jura. One evening in Arbois - the heart of the region - we found ourselves in a local bistrot eating a delicacy of bird cooked in Vin Jaune sauce with morels. (A great homage to the dish has recently been done by Marion Wine Bar on Gertrude Street if you’ve never tried it.)

As the night unfolded, we got chatting with a nearby table of local farmers. Very curiously - and very generously - and very loudly - they opened the conversation by pouring us wine and declaring “In Jura, we drink Savagnin!” - Oh yeah?

A strong start with our new friends, until they learned we were Australian. Unbeknownst to us, Australia had ripped up the notorious French submarine deal just the day prior. We’d been travelling and had completely missed the news (no time for the paper when hungover eh). Unsurprisingly, this wasn’t especially well received.

After some delicate diplomatic triage, a few bandages (slaps on the back), and considerably more wine, harmony was eventually restored. We all left the evening with arms locked, singing together “We all live in a yellow submarine.”

Season appropriate dishes are being inspired by the cold - A heart warming gnocchi of particular note. Steak night continues to be a wonderful time on Wednesday’s.

We’ve also gone live with a massive new wine bottle list - Our largest and most special yet (with exceptional feature pages on the Jura region and also beloved Burgundy producers Alice & Olivier de Moor).

Birthdays, parties, popups, wine tastings, celebrations, brand activations, private long table dinners, launch events, art exhibits, corporate functions, record fairs, jazz, dungeons and dragons - even wakes if the local pub doesn’t cut it.

Our rear Atrium space usually hosts between 20-50 people depending on the style of event, has a full bar and a wonderful vintage Tannoy dual concentric sound system, Condesa rotary mixer, technics turntables and CDJ’s.

Holy Pomelo!

Sous vide organic jalapeños form a vivid spiced syrup. A citrus lick is provided with fresh and seasonal grapefruit. Mezcal to keep things structural sound. Wrapped up in a beautiful bow with the dark cherry richness of Ratafia Rossi and a house-made garnish.

…Originally meant to be a cucumber inspired drink called ‘Holy Pepiño’… but things took an ungodly turn for the worse with Margot and Cam in the Waxflower lab… and the name just stuck(ish)!

Michael of is back in Wax this weekend, opening wonderful and rare Italian wines to serve by the glass until they sell out - so get down early.

Chef Dave will pair these with a snack-focused Mediterranean menu, with music and party vibes wrapping everything together.

Expect crudo, skewers over the fire, and Lambrusco-charged oyster mignonette + more.

On the wine side, we’ll be opening bottles from cult producers including Tanca Nica and I Custodi. We’ll also be pouring a special Catarratto/Zibibbo blend from our friend Paolo of

…Even a bottle of Valentini Trebbiano d’Abruzzo is getting cracked. Hailed as Italy’s best white wine.

We did this a few years back and had a hoot shaking up the usual format by going full turbo Italia.
