We’re just a month away from being joined for an entire week of services by one of our favourite chefs in the entire world, for the Melbourne Food & Wine festival.

Will who now heads up Sargasso, a Seafood-focused winebar in Margate on the East Coast of England will be familiar to Australian audiences with his time alongside Luke Burgess at the memorable and long-missed Garagistes in Hobart.

He was also famously the first chef to introduce the electric hobs into Hackney’s P.Franco, largely shaping the way that we cook and eat in modern-day wine bars and opened Bright together with Brico’s own Phil Bracey in London Fields, The Guardian described his food as “future-facing, lovingly sourced and whip-smart”.

Nowadays, his focus is on celebrating the seafood at his disposal along the British Coastlines - we’ll use our contacts to source some of Victoria’s best and sustainably caught seafood for the week as Will takes charge of the Brico kitchen from Wednesday to Sunday.

This will be a very special week, we’re so excited to bring Will back to Australia. Bookings are to be made via our usual avenues (website or phone) — Set Menu is $110 and mandatory for reservations but we’ll have a daily short snacks menu to cater for walk-ins where we can.

NEXT WEDNESDAY — Our first winelist takeover of the new year welcomes the Broderick family from Blockers Road in Basket Range, Adelaide Hills.

Phillip and Mary Broderick notoriously planted some of the earliest vines in the Hills way back in 1980 and have now handed over all responsibilities to their son Sholto.

Come get to know one of Australian wine’s fastest rising stars and taste his array of Chardonnay, Pinot Noir and regularly awarded Cabernet Sauvignon.

Everything will be available by the glass on the night, no spend commitment is necessary as you can book online or we’ll keep plenty of spaces along the bar and in the courtyard free for walk-ins.
