Our cheese of the week is a proper strong extra mature cheddar from Sussex. Burjack is the Traditional cheese dairy’s limited edition winter powerhouse, we have kept it maturing a bit longer for that extra crystalline punch.

Sitting on top is another powerhouse from Saint Cosme, more famous for their southern Rhone output, but disregard this St Joseph at your own peril. 💯% Syrah wrapped around a tight core of spicy blackberry fruit, olive tapenade and rosemary.

If I say so myself, this is our best pairing yet……and as usual - Only one way to find out!!

This week’s cheese is Spenwood from Village maid cheese in Berkshire, and according to the world cheese awards the best British cheese, here paired expertly with Domaine serol Elclat de Granit, the worlds best gamay (according to me)

Spenwood is a ewe’s milk number, dense and nutty with an alluring creaminess. In terms of flavour we are somewhere between a Sardinian pecorino and a well aged manchego.

Classics are classics for a reason, and what’s more classic than a creamy (or should that be dreamy?) washed rind oozy filth washed down with some 1er Cru Burgundy?

Soumantrian is a close relative to Brillat-Savarin and Epoisse and sits somewhere between the two in taste, here joined by its inevitable bedfellow white Burgundy from renowned Chablis producer Defaix branching out to the chalonnaise for some lip smacking Rully. What could possibly go wrong?

This weeks cheese is ‘lindley’ from ex Brighton bartender turned northern cheesemaker Lindley is a jersey cream enriched bloomy rind marvel that we love here at TGB. And what goes great with cheese? Quince! Indeed, and what’s quince in Greek? kydonista! So obviously we have a Greek wine from the grape with the same name. Tropical with a searing acidity to cut through all that creamy deliciousness!

Which is the best wine here? Some would say Provence, but I would say that’s wrong, and I’m willing to die on that hill ...

This week’s cheese is Cuthman, named after the patron saint of Steyning.

The cheese is made by Matt Gue from Huddlestone Farm in the Adur Valley, his award winning cows produces a rich creamy milk that he turns into a rich snd silky bloomy rind cheese that pairs perfectly with anything crisp and fizzy. And on that note we have paired it with a vinho verde from Aphros, this however isn’t your avarage TikTok wine influencer’s idea of the style. Biodynamic farming, and low intervention winemaking produces a wine many levels above.

This week’s cheese is a double cream enriched WOWZER from the Sharpham dairy in Devon. Citrusy and fresh with hay bales and hint of mushroom in its’s infancy, creamy and gooey when fully matured. Here photographed with its natural bedfellow - a 100% pinot meunier champagne from biodynamic goodness and what can be achieved when you farm properly and stay away from the conglomerates….this is a world class champagne from the historic workhorse of champers, but there seems to be no end to the revolution of meunier as a single variety.
