Banana Bliss begins with aged Armagnac and island rum, deepened by a rare Italian walnut liqueur and the warmth of banana and cane spirit, finished with a whisper of cinnamon and orange. New on the menu: the Chicago Fizz.

Born in the back-bar ledgers of pre-Prohibition Chicago, this one was built for drinkers who wanted rum and whiskey in the same glass; a compromise that somehow became a classic. Our version leans into that history: Appleton Signature Blend Rum meets Sol Tarasco Charanda for a funkier, more agricole-leaning backbone, rounded out with Graham's Six Grapes Reserve Port for depth and a whisper of dried fruit.
Lemon juice and dark gomme syrup keep it balanced, a super foam gives it that pillowy, old-world head, and a top of Fever Tree Club Soda lifts the whole thing into something bright, effervescent, and dangerously easy to order twice.

Some secrets are worth sharing. 🐝 The Bee's Knees was born behind doors like ours — honey to soften the gin, gin to loosen the lips. For Bee's Knees Week (June 12–21), we're pouring three: the Classic, the Pollen Collins (Barr Hill Tom Cat gin, Dolin Blanc, crème de cassis, lemon, salted honey, soda), and the Honey Vesper (Barr Hill gin, St. George citrus vodka, Lillet Blanc). Order one, post it, tag — every pour plants a square foot of pollinator habitat. Mum's the word. The bees, however, may talk... 😉
