That’s the idea behind A Little Night W**e, the very first tasting from The Palate Society.

On Thursday, September 24, we’re taking inspiration from familiar cocktail flavors—think Spritz, Gimlet, Martini, Negroni and more—and using them as a starting point to explore six very different w**es.

No w**e expertise required. In fact, that’s kind of the point.

If you know what you like at the bar, we’ll help you discover what you might like in the w**e aisle.

Six w**es. A few delicious bites. Plenty of stories. And hopefully a new favorite or two.

The dates are set, and the fun is just beginning.

Join us for this series of pop-up w**e experiences coming to the Peoria area—creative nights built around great w**e, delicious bites, unexpected stories, and imaginative themes that make discovering w**e feel a whole lot more fun.

We kick things off September 24 with A Little Night W**e—a tasting inspired by the cocktails you already know and love. Think Spritz. Gimlet. Martini. Negroni. Old Fashioned. Only this time, we’re finding their w**e counterparts.

And then October gets… darker. 🩸

Bloodlines: A Moonlit Feast invites you into a five-course gothic w**e dinner inspired by Dracula, Nosferatu, The Hunger, Blade, and the deliciously decadent world of vampire lore.

And that’s just the beginning.

Our first Palate Society events are officially live, and I cannot wait to share these nights with you.

Hello, w**e friends! It’s been a minute, but I have good news: Palate has been quiet, but we’re still here. 🍷

When I first announced the Palate Tasting Room, the dream was a brick-and-mortar location. And while that dream is still alive — the first chapter is taking a slightly different shape.

Today I'm excited to introduce THE PALATE SOCIETY: intimate, ticketed w**e classes, tastings, and experiences hosted in different locations around the region.

Think thoughtful w**e education, beautiful pours, good conversation, and a community of people who want to learn, sip, gather, and enjoy w**e together.

It’s been another productive week behind the scenes at The Palate Tasting Room.

We’ve been meeting with contractors, coordinating project details, and making progress toward opening our doors in the Warehouse District. While we don’t have an official opening date to share just yet, we’ll be excited to share next steps as they come together.

In the meantime, we’ve started tasting with many of you through private, off-site w**e experiences, and we’d love to connect in that way while our space takes shape.

Thank you for the patience, encouragement, and excitement. We can’t wait to welcome you into The Palate Tasting Room and share w**e with you soon. 🍷

It’s been an amazing week for the Tasting Room. Here is 1 of 2 highlights to share. 💛

I had the chance to reconnect with one of my longest and dearest friends in w**e this week—someone I worked alongside at a w**e bar in DC more than 20 years ago. What started as coworkers grew into a lifelong friendship, and watching her build her own path as an entrepreneur has been incredibly inspiring.

We met up in St. Louis this week to support each other’s journeys, reflect on how far we’ve come, and dream a little about what’s ahead.

Here’s to friendship, good w**e, and the next chapter for Boom Photo Booth and Tasting Room. 🥂

Starting a food and beverage business is a lesson in intention.

In these quieter winter weeks, I’ve been working behind the scenes—food safety and allergen training, permitting and licensing, and all the important details that ensure Palate Tasting Room is a place you can enjoy with confidence.

It’s meaningful work, and it’s shaping the space in thoughtful ways.

As we head into 2026, it’s fun to look at this list of w**es worth tasting from 2025! Have you tried any on the list? I love tasting because you don’t have to commit to one glass or bottle. You get to try a few before picking your favorites and then go from there. I’m really excited about tasting with you all in 2026.. Stay tuned for details on opening! As soon as we get through all the permits, we will throw a big party and get it started. Here’s to the fun we are going to have in 2026!  🥂🎉🍾
