Sure, there are easier ways to shape a burger, but this method produces the best result.

It takes a little time to get them even from end to end and side to side, but the finished product is worth every bit of effort.

I think I’ve told the story of Caesar Cardini once before, but seeing this photo 📸 reminded me of it. If you’ve already heard this, my apologies.

It’s widely believed that Caesar salad has its roots in Italy 🇮🇹, but that isn’t quite true. A clever Italian did invent it… just not in Italy.

Caesar Cardini ran a restaurant in Tijuana, Mexico, a popular stop during Prohibition when Americans crossed the border for an adult beverage. 🍸

The story goes that on July 4th, his restaurant was busier than expected and running low on staples. Cardini improvised (a hallmark of Italian cooking 🤌) and prepared a salad with what he had on hand: romaine, eggs, Worcestershire, lemon, and Parmesan—served tableside for a touch of flair. ✨

Today, it’s one of the best-selling salads in the world.

Consistency over time doesn’t always get the credit it deserves when a beautiful dish comes out but we believe it is essential.🔥

Bronze is the preferred material for the die heads, as it has a rougher texture than its plastic counterparts, creating grooves on the exterior that help sauce cling to the pasta 🍝.

Today we’re making spaghetti, but we also have several dies for shapes like fusilli, rigatoni, and a little shell pasta called Gnocchetti Sardi 🇮🇹, traditionally made by hand in Sardinia.

We also add some water 💧 to help activate the gluten in the flour, improving the chew in the finished product.

Over the last couple of years, we’ve talked a lot about our homemade pasta 🍝, most notably our hand-cranked shapes and ravioli.

This week, we’re focusing on our extruded pastas. We were really lucky to find this machine right after COVID and have made good use of it ever since.

Semolina is the primary ingredient, a coarse durum wheat 🌾 flour that creates the texture and chew we all love in pasta.
