Here's our thesis on contorni: After years of ridiculously intensive cultivation and care, these veggies must not be allowed to die sitting limp off to the side of a steak.

Our farmers are showing up with bigger bins each week.

Send up a cheer for Graham House (Graham House), newly named North Carolina's Best Chef of 2026 by The Local Palate ().

Here's a man who cares deeply about his home region, his craft, his family, his old cars, his teammates, his farmers & providers, his ingredients, and his guests.

This week, he'll be slinging pizzas (including the perennial Forager Pie, which no one should have to live without trying) and helming the expo line and tinkering with the menu and telling you all about it if you sit near the kitchen.

The singular Sarah Charles. Sweeps a spot in FSR's 2026 Rising Stars (their 40 under 40), then sweeps up a few crumbs, then sweeps across the dining room to welcome you to the dining experience of your life.

We're astonished by the expanse of what this woman can, and regularly does, do. She's the one:

Interviewing the wide-eyed server who's heard the good word around town and is now face to face with the principal speaker thereof.

Hefting and stocking wine bottles by the crate, after crate, after crate, "Corner!" after "Corner!" after "Corner!".

Giving the rousing pre-meal pep talk — and sometimes the mid-meal pep talk, too.

Testing, tasting, and adjusting ratios in a new cocktail, down to the drops.

Hopping between spreadsheets and tastings and tough talks and unrestrained cheers like it's all one beautiful flow.

Pausing her flurry of activity, mid-service, to sit in fully present conversation with a lone guest who just needed a friend.

Disappearing for five seconds and reemerging, like Superman, in a whole new wardrobe.

Gracefully fielding calls and emails and texts from guests and managers and planners and owners and florists and who-knows-who-else — and somehow, making each feel like they're the only other person in her phone.

Hopping behind the bar to mix up a special one in a pinch.

Touching tables, and in the process, genuinely touching hearts.

To be perfectly candid — it's Sarah Charles's world, and we're just cooking/serving/dining in it.

We're reflecting on our core values this week, after a wonderful visit last week from the Indigo Road Director of Culture, Chris Amato. In his time with us, he emphasized the importance of working collaboratively. That means from the person delivering wine, to our hotel team welcoming you to the space, and most essentially the front and back of house teams.

Both before service and in the thick of it, we work together towards our common goal of creating memorable moments for our guests. It’s not just dinner — it's DINNER. A moment to come together, to celebrate big and little moments, savor our time with our loved ones.

We do not have lamb in house very often, but when we got one recently, it was quickly processed into 5 different dishes. This doppio pasta is one example, featuring a dichotomy of two different representations of Spring 🌸 Featuring smoked and braised lamb neck on one side, paired with upland cress ricotta on the other, dressed with rich lamb jus and a crisp finish of forced tardivo. Thoughtfully crafted by our remarkable ✨
