Hours before the first guest walks in, the kitchen is already deep into the evening. Stews are built slowly, sauces are tasted and tasted again, and while the dining room is still on tonight, the kitchen is quietly working on tomorrow.
Dutch cooking is not fast food. It rewards patience, and that patience is the reason a plate of stamppot or hachee tastes the way it does.
