The part of dinner you never see. 👨‍🍳

Hours before the first guest walks in, the kitchen is already deep into the evening. Stews are built slowly, sauces are tasted and tasted again, and while the dining room is still on tonight, the kitchen is quietly working on tomorrow.

Dutch cooking is not fast food. It rewards patience, and that patience is the reason a plate of stamppot or hachee tastes the way it does.
It is quiet, focused work that nobody in the restaurant ever sees, so we think it deserves a moment in the spotlight.

Reserved seat. Golden crown. Zero intention of moving. 👑

There are frogs hiding all over Prince Charming. Some take real effort to find. This one, sitting on the velvet bench in full royal outfit, clearly believes he is the main character of the evening.

It all goes back to the old fairytale of the frog who turned out to be a prince, which is where our name comes from. Guests keep telling us how many they spotted during dinner, and the record keeps climbing.

Rule one of Amsterdam: never eat a bitterbal straight from the plate.
Rule two: everybody does it anyway. 😜

Crispy on the outside, molten and savoury on the inside, always with mustard and always with something cold standing next to it. There is no elegant way to eat one. You bite, you burn your tongue slightly, you reach for the next one regardless. It is the single most Dutch thing you can order, and it happens a short walk from Central Station.
