Rising Sun is introducing the Apricot Collins — our signature cocktail for cocktail week. A bright, refreshing drink that blends the crisp botanicals of Bombay Sapphire gin with the delicate sweetness of apricot liqueur, finished with fresh apricot!

For guests preferring a non-alcoholic option, we’ll also be serving the Apricot No Collins, crafted with Tanqueray 0.0% for the same refreshing experience, without the alcohol.
