Long Island Beef Curry
Some dishes are created in kitchens. This one started with memories.
Growing up in Southern Thailand, curry isn’t just food, it’s atmosphere. Every family had their own version. Every bowl carried its own identity. The aroma of roasted coconut, garlic, dried chillies and warm spices drifting through humid night markets before you even see the pan. That memory stayed with me.
When creating this dish for MA-KAN, I wanted to capture that feeling. Rich coconut milk cooked low and slow with beef, garlic, star anise and cinnamon, lifted with kaffir lime leaf, lemongrass and dried chillies, then finished with turmeric and our secret MA-KAN Long Island spice blend, a recipe that took years to perfect.
The name “Long Island” comes from that coastal energy shared between Southern Thailand and Long Island itself. Heat. Chaos. Salt air. Stories. Escape.
