A huge thank you to Arbikiefor taking us through the range and sharing the story behind one of Scotland’s most innovative distilleries.

From field-to-bottle production to some seriously impressive drams, it was one of those evenings where the conversation was just as enjoyable as the whisky.

Some pairings just work.

We’ve been enjoying fresh Maldon oysters with Highland Park 12, and it’s become one of our favourite combinations. The freshness and salinity of the oysters bring out the whisky’s honey, citrus and gentle peat in a way that’s surprisingly balanced.

If you’re usually reaching for Champagne with oysters, give whisky a go next time you’re in. You might be pleasantly surprised.

It’s another reminder that great whisky isn’t just something to drink on its own.

Most people think about whisky pairings in terms of cheese, chocolate or charcuterie.

We’re here to make the case for Padrón peppers.

The slight bitterness and char from the peppers works surprisingly well alongside the rich spice, dark fruit and oak of Yester Year 6 Year Old London Rye.

Not every pairing needs to be complicated.

Just good food, good whisky and good company.

Another full house.

Last night we welcomed a sold-out room downstairs for an evening with House of Suntory, exploring the whiskies, flavours and stories behind one of Japan’s most influential producers.

From the first pour to the final highball, the room was buzzing with questions, conversation and plenty of great whisky.

A huge thank you to everyone who joined us and helped make it such a memorable evening, and to the House of Suntory team for sharing their time, knowledge and bottles with us.

Tuesday tastings are quickly becoming one of our favourite nights of the week.
