Introducing the newest Corrochio’s Signature Tacos!
Over the past few months we’ve developed a number of Signature Tacos to our la carte menu. It started with the XO Taco we created exclusively for the opening of .cinco last year - an elevated small bite that packed so much of a punch that guests were ordering 2-3 at a time. So it was a no-brainer to bring it upstairs.
And so it began. Soon came the Califa (V1, V2, & V3!), and the Black Pastor Gringa. Chef patron has so many ideas that last week he said *f**k it* and just put them all on the menu.
So, without further ado, on the menu from today…
MAR Y TIERRA
A surf-and-turf indulgence! Scottish sirloin cooked in lime & lard. Pasilla prawns, cheese costra, charred onion & jalapeño dressing, avocado, salsa borracha & a jalapeño toreado. If you’re feeling really fancy you can add a smoked bone marrow with a sprinkle of sal de gusano on the side 🐛
TACO CALIFA VERDE
Califa Taco but make it green 🌱 Grilled courgette, cheese costra, charred onion & jalapeño dressing, salsa verde & a jalapeño toreado
FISH ZARANDEADO TACO
A trip from Guadalajara city to Sayulita beach 🌊Seabass marinated & cooked in the famous Nayarita zarandeado sauce, cheese costra, alfalfa bed, peashoots, tomato, topped with salsa macha.
A little costra action at the end to get your mouth watering!
