Last night was one of those evenings that reminds you why we do what we do.
A full restaurant, a busy team, plenty of laughter, plenty of wine, and guests enjoying every moment.
The evening began with canapés and fizz before guests sat down to enjoy shellfish bisque, smoked salmon terrine, roasted rack of Cotswold lamb and slowcooked shepherd’s pie, followed by treacle tart, lemon thyme & clotted cream, cheese for the table, and petit fours to finish.
From start to finish, the kitchen was on top form.
The wine flowed, the Crémant was enjoyed, the port and coffee followed, and thankfully so did the conversations long into the evening.
We also captured a few behind-the-scenes moments throughout the night, and it’s always lovely to see the team stepping up and delivering such a fantastic service together.
What guests don’t always see is everything that happens before the first arrival.
From preparing eight courses and canapés to setting the restaurant, polishing glasses, checking every detail, and making sure everything is ready for service, it takes a huge amount of work from the whole team.
Without that preparation, evenings like this simply don’t happen.
That’s where teamwork really comes into its own, and last night every member of the team played their part.
Often, it’s the moments behind the cellar door that make the biggest difference.
Now, on to the weekend.
