Over the past two years we’ve hosted an internal competition amongst our team to produce their rendition of a Negroni to be featured for Negroni Week. This year, three were selected.

The making of the Wabi Sabi Martini 🍸

First, a ceremonial grade matcha is blended with Tanqueray 10 and sous vide. Next we run it through the rotovap (rotary evaporator).

We then combine the matcha distillate with Cocchi Americano, salt, and Hinoki bitters before diluting and bottling.

It’s then chilled in the deep freeze until ready to serve, and finished with lime oil expressed on top.
