One fish. A whole new perspective.

Our signature Hiramasa Kingfish is a showcase of Jason Dean creativity, where every part of the fish has a purpose.

Kombu-crusted loin, delicately torched belly and smoked brandade come together with citrus ponzu. As a finishing touch, the fish bones are slowly smoked and transformed into a delicate cracker shaped like the fish’s spine.

A little culinary ingenuity, a lot of attention to detail, and nothing going to waste.
