The process → the dish.

Hand cut mafalde ribbons tossed through a rich tomato and vodka sauce, finished with stracciatella, chilli and Parmesan.

Fresh ravioli shaped by hand... Each parcel filled with spinach and ricotta and folded before being finished in a rich sage brown butter.

King prawns sizzle over the charcoal grill, before being plated with garlic, parsley, lemon and chilli for the perfect balance.
