What’s scarier than Violet’s Ghost? Finding out the juicing room never got rid of her. 👻🫐

Violet Beauregarde had one rule: **do not chew the gum.** Naturally, she chewed it anyway. One moment she was bragging about being the world’s greatest gum chewer... the next, she was swelling into a gigantic blueberry while Oompa Loompas rolled her away to be juiced.

But we’re not convinced Violet ever left the factory.

Every Halloween, the faint smell of blueberry cereal drifts through the Blue Goose, the lights flicker & bartenders swear they can hear wheels squeaking down the hallway. That’s when Violet’s Ghost appears.

We captured her bold, stubborn & wildly mischievous spirit in a milk-clarified blueberry Cheerio-milk cocktail & turned her unforgettable personality alcoholic. It’s herbatious, hauntingly nostalgic & dangerously easy to drink. Like childhood cereal possessed by something much stronger.

Take a sip if you dare… but if you start turning blue, don’t say Wonka didn’t warn you. 🫐💙

Barrel-Aged Ember isn’t simply ordered, it’s summoned. 🔥🥃

Scotch, espresso liqueur & Fernet-Branca are laid to rest in port-soaked oak barrels, emerging impossibly deep, dark & smoky. Like a glowing fire in cocktail form.

Then comes the plot twist: a dark chocolate sea-salt caramel truffle powerful enough to steal the entire show. Take a sip. Take a bite. Sip again. As the chocolate melts, the espresso grows richer, the caramel pulls sweetness from the oak & the sea salt sends the smoke roaring back to life. Bite by bite, the cocktail transforms until that final sip tastes even better than the first.

This isn’t a cocktail with a piece of chocolate. It’s a full-blown flavor experience that might actually knock your socks off… when the blue light is on. 💙

Obviously, *What You’re Having*. 😉

At first glance, it’s crystal clear & perfectly innocent... then we crown it with a silky cloud of strawberry pineapple foam. Beneath it, pisco, Lillet, Vikre Classico Aperitivo & rhubarb bitters create our bold reimagining of a White Negroni.

Floral, bittersweet & tropical, with foam that melts into every dangerously smooth sip. You’ve never had anything quite like what we’re having. 💙

The milk is turning rainbow colors, Mom is getting ready for work, your backpack is by the door & the school bus will be there any minute... but nothing matters until the episode is over & you’ve finished that last sweet sip from the bowl.

From New Orleans to Austin and back home to Minnesota, Chris has spent years perfecting his craft behind the bar.

With a passion for people, flavor, and new experiences, Chris has built his knowledge of w**e, food, spirits, and cocktail creation through years of hands-on experience, world travels, and further education at the Culinary Institute of America.

Now, after more than a decade away, he's back in the state he grew up in and ready to bring his experience, creativity, and love for the craft to the bar.
