What a fun few weeks at The Yellowstone!

A huge THANK YOU to everyone who joined us for our Haunted Dinners this October! We had an absolute blast sharing some of the history, stories, and maybe a few ghosts of the old Hotel Yellowstone with all of you. We hope you enjoyed the evenings as much as we did!

We're already talking about next year and would love to make our Haunted Dinners even bigger, with more nights and a few new surprises. If you attended, we'd love to hear what you thought! What did you enjoy most? What would you like to see next year?

Turkey and cranberries aren't just for Thanksgiving!

One of the dishes we're especially excited about for our November 9 w**e pairing is our Herb-Roasted Turkey Roulade, filled with spinach, sage, and thyme, served with a lemon-herb jus and tart cranberry gastrique.

We're pairing it with Line 39 Ranchlands Sauvignon Blanc, a crisp, refreshing w**e that brings everything together.

It's one of five courses we're preparing for Autumn at The Yellowstone.

At The Yellowstone Restaurant, we believe our locally owned restaurants deserve support, respect, and kindness. We absolutely do not condone the behavior described in this article. There is no place in our community for theft, prejudice, or mistreatment of others. Our business is difficult enough.

We have enjoyed dining at both Mandarin House and Ming's and have consistently experienced wonderful food and great service. These are locally owned businesses whose owners and employees work hard every day to serve our community. They deserve our appreciation and support.

The restaurant industry is challenging, even on the best days. According to the National Restaurant Association, food costs have increased approximately 34% nationally since before the pandemic. Add rising wages (which our hardworking employees certainly deserve), utilities, insurance, taxes, and countless other expenses, and the reality is that restaurant profit margins are often incredibly thin.

Locally owned restaurants also face the challenge of competing with large national chains. What sets us apart is our connection to this community. We employ our neighbors, support local schools and organizations, invest in our community, and take tremendous pride in the people we serve. For us, it's about much more than running a business.

We also recognize that hospitality is a very human business.

Sometimes we make mistakes. Service may be slower than expected, a meal might not be perfect, or an experience may fall short of expectations. But the overwhelming majority of people working in hospitality come to work every day with one simple goal: to take care of others and provide a great experience. No one sets out to disappoint a guest or ruin someone's day.

And we never really know what someone else may be going through. The person serving your table or preparing your meal may be facing personal struggles, dealing with a family emergency, or grieving the loss of someone they love. A little patience, compassion, and understanding can mean more than we realize.

Supporting local businesses doesn't mean overlooking mistakes or avoiding accountability. It means recognizing the people behind those businesses, appreciating what they contribute, and giving them the opportunity to make things right when things don't go as planned.

We encourage everyone to continue supporting Mandarin House, Ming's, and all the locally owned restaurants that help make our community special. They are an important part of what makes Pocatello uniquely home.

We're bringing the flavors of fall together for a special five-course w**e pairing dinner on Monday, November 9, 6 PM.

Our culinary team has put together a menu featuring butternut squash, herb-roasted turkey with cranberry gastrique, mushroom ravioli, roasted pork loin, and pumpkin cheesecake. Each course will be paired with a w**e chosen to complement the dish.
