Incredibly proud of everyone pictured here — and the many, many team members who aren’t. Getting everyone in one photo is nearly impossible, especially when pre-shift is already in motion! It takes every one of them to keep both restaurants going, and our doors wouldn’t be open without them.

The Duck Service

We’ve wanted to create a special service at Kole for a long time. We just needed the right dish.

We found it in the duck. And being in Lititz, it feels pretty fitting.

Our 14-day dry-aged Muscovy duck comes from the Hudson Valley, brushed with raw honey and slowly cooked over charcoal in the Josper.

We first bring the duck to your table whole, straight from the Josper and surrounded by local flowers — a chance to see it before we take it back to carve and finish. It returns with potato purée, duck jus & ruby porto, morello cherry & armagnac jam, and swiss chard with aronia berry vinegar.

We prepare just one each evening, and that duck is yours from the beginning. Because of the time that goes into aging and preparing each one, we ask for about a week’s notice.
