What Makes Sparkling Wines Unique?
Sparkling wines are defined not only by their bubbles, but by the craftsmanship behind them. From fresh and fruit-driven styles to complex, age-worthy expressions, sparkling wines reflect both terroir and method of production.
The two primary techniques we will explore are:
Traditional Method (Méthode Champenoise) Used in Champagne and many premium sparkling wines, this method involves a second fermentation in the bottle. It produces finer, more persistent bubbles and develops complex flavors such as brioche, toast, and nuttiness through aging on the lees.
Charmat Method (Tank Method) Commonly used for Prosecco, this method carries out the second fermentation in a pressurized tank. It emphasizes freshness, preserving bright fruit and floral aromatics, resulting in a softer, more approachable style.
The Wines We Will Discover
Prosecco Le Contesse – Single Fermentation (Italy) A fresh and vibrant Prosecco with notes of green apple, pear, and white flowers. Light, aromatic, and approachable.
Val de Mer Chablis Non Dosé – Traditional Method (France) Crisp and mineral-driven, with citrus and green apple notes. Bone-dry and precise, showcasing Chablis terroir.
Cava Peñalba López – Spain Balanced and expressive, offering baked apple, almond, and subtle brioche with lively acidity.
Thibaut-Janisson Extra Brut – Virginia A refined, Champagne-inspired sparkling wine with citrus, stone fruit, and delicate toasty notes.
Ayala Brut Nature Champagne – France A zero-dosage Champagne of purity and elegance, with fine bubbles, citrus zest, chalky minerality, and a long, dry finish.

Each guest will enjoy a thoughtfully prepared individual charcuterie board, designed to complement the wines.
