Nobody orders a dish for the rice.
This is an exception. The basmati here is aged two years. long enough that the grains dry out, firm up, and cook into something that stays separate and carries more aroma than rice freshly milled.
It's rare, and we go out of our way for it. Most people won't think twice about the rice. The ones who do, notice immediately.
Pan-seared Halibut, 2-years aged basmati, lemon-saffron velouté and spinach quiche.
