INGREDIENTS:

(A)
300g Naga Mutiara HealthyBlack Rice
(add a pinch of salt to soak)
300g Glutinous Rice
(add a pinch of salt to soak)
1 tsp Salt
2 tbsp Shallots oil
4 tbsp Fried Shallots
1/2 tbsp Seasoning powder

(B)
300g Pork Belly (small bites)

40g Dried Shrimps
(soaked with hot water)

15g Dried Oyster
(soaked with hot water)

500g Black Eye Bean
(Steamed and Crushed)

15g Dried Scallop
(soaked with hot water)

10 Salted Eggs
(yolk divide into half)

Salt to taste
pepper to taste

(C)
20 pcs Bamboo leaf Dumplings
(cooked until soft with some salt)
20 pcs of Zongzi twine/water grass (soak for 30 minutes)

METHOD:

To prepare the rice:
Soak black rice and glutinous rice for 1/2 hour. Wash and rinse rice with tap water. Combine ingredient (A) and set aside.

To prepare the filling:
step 1
Marinade meat with five spice powder and salt

step 2
Crush and blend Black Eye beans into paste. Stir-fry with heat in a wok so that the paste is not too wet. Set aside.

To wrap the Dumplings:
step 1
Place 2 bamboo leaves on top of each other and form into a hollow cone.

step 2
Add in 2 tbsp rice mixture into the hollow cone bamboo leave and all a tbsp of the cooked fillings.

step 3
Add 1 tbsp of rice mixture to cover all the ingredients inside the cone.

step 4
Hold the two sides of the code tightly, fold the bamboo leaves inwards, and seal the top of the cone. Hold the bamboo leaves close to the two sides of the cone, and fold the extra bamboo leaves to the sides. Tie the rice dumplings tightly with Zongzi twine/water grass and tie a knot.

step 5
Prepare a deep pot, fill it halfway with water, add 1 tbsp salt and bring to a boil, put the dumplings in and cover to cook for about 2 hours. When it is cooked, take it out and hang high so that the excess water can drip off.

将黑米和糯米浸泡半小时。用自来水清洗和冲洗大米。将材料 (A) 混合并放在一边。

Black rice is not easy to produce compared to other rice, making it a luxurious food for the richest of the rich which included royalties during the olden days.

Now, it is so much healthier to have especially if we make dumplings with it during this festive Dragon Boat Festival. It tastes good, is chewy, gluten free and high in fiber. Suitable for individuals who are diabetic to enjoy!

Let’s make some with the ingredients below.

INGREDIENTS:

1 cup HealthyBlack Rice

To Blend (A):
10g Ginger
Four Candlenuts
120g Onion/shallots
10g Garlic
40g Lemongrass (edible part)
70g Red Chilli (remove seeds)
60g Galangal (remove skin(
2 Dry Chilli (remove seeds)
4 tbsp Cooking oil

To Season & Simmer (B):
1 tbsp Turmeric powder
4 tbsp Malaysia Curry powder
One stalk Curry leaves
3 Kaffir lime leaves
12g salt
15g sugar (brown)
200ml coconut milk (low-fat)
100ml Vegetable stock/water with 1 tsp vegetable seasoning powder

The Vegetables (C):
100g Tofu puffs (bite size)
150g Long beans (1 inch part)
100g Cabbage (bite size)
150g Carrot (bite size)
200g eggplant (bite size)


METHOD:

To prepare rice, do follow the cooking method instructions at the back of the rice packaging.

Cut all the ingredients in (A) into small pieces. Use a flood blender to blend until it becomes a smooth paste. Then sauté curry paste over low heat until it turns aromatic.

Add the remaining seasoning (B). Then add the coconut milk and vegetable stock to form a gravy.

Add vegetables (C) and let it turns soft. It should take around 5-10 minutes with medium heat. Once vegetables are soft, add the tofu puffs. Remove from heat once curry returns to a boil. Serve with Naga Mutiara HealthyBlack rice and stay healthy always!

You can use other vegetables such as beancurd skin, fried gluten balls, tomatoes, potatoes, cauliflower and broccoli. Tomato
Paste is also a suitable ingredient to improve the flavour.

100 克豆腐泡(一口大小)
150 公克長豆角(約 2.5 公分)
100 克高麗菜(一口大小)
胡蘿蔔(一口大小)150克
茄子(一口大小)200克

做法:

煮飯時,請按照米飯包裝背面的烹調說明進行操作。

將(A)中的所有食材切成小塊。用攪拌機攪拌成細膩的糊狀。然後用小火煸炒咖哩醬,直到香味散發出來。

加入剩餘的調味料(B)。然後加入椰奶和蔬菜高湯,製成濃稠的湯汁。
