We just stocked up on Grape Republic, the wild and free-spirited winery redefining Japanese natural wine in Yamagata Prefecture. These bottles are all about purity, drinkability, and raw energy. Translation: They make food taste amazing.

Sous le Végétal (Greece) isn’t a winery—it’s a conversation with nature. 🌱

The name Sous le Végétal means “under the vegetal,” hinting at the idea that wine isn’t just grapes—it’s everything growing around them: wild herbs, plants, soil, insects, and invisible life that shapes the vineyard.
Behind the project are two natural wine makers: Jason Ligas (Greece) and Patrick Bouju (France). Together, they work with old vines and biodiverse sites—especially on Samos—where Jason channels the land and vines, while Patrick brings his playful, low-intervention touch in the cellar.

No formulas. No fixed style. Just grapes, place, and instinct.

Wild fermentations, minimal sulfur, and a “let it speak” philosophy guide every cuvée.
