From our A la Carte: pansotti pasta with smoked almond, mascarpone, basil and red pepper sauce.

Seasonal in colour, generous in flavour, and every bit as deliciously Unruly as it sounds. 😍🐷

Our first video of the series we are going to share with you how we make our Cod’s roe emulsion 🐷

• 50g brioche breadcrumbs
• 100ml milk
• 125g smoked cod’s roe
• 1 clove garlic
• 2tsp Dijon mustard
• 285 olive oil
• 3 tbsp water

Gently warm the milk and stir in the breadcrumbs until absorbed and cool down, this is your panade.

Blend panade with the cod’s roe, mustard and garlic until smooth. Emulsify oil in through the top of the blender in a steady stream. Use the water to manage consistency- feed in to keep the emulsion a nice texture and spinning well (eg if it gets too thick add a splash of water - make sure you always have a vortex spinning)
