Foreman's Piña Colada Cheesecake

We took the cocktail and made it a cheesecake. A crunchy, buttery digestive biscuit bottom, topped with a rich, creamy coconut and pineapple cheesecake spiked generously with rum. Tropical, creamy, and dangerously moreish.
