A little watermelon. A lot of trouble🍉

• Watermelon juice
• Sugar
• Acid solution
• Saline solution
• Gelatin

Bloom the gelatin {12 g} in the watermelon juice {30 g}.

Mix the remaining juice {270 g} with the sugar {30 g}, acid {15 ml}, and saline solution {3 ml} — stir until it completely dissolves.

Heat half. Slowly. Don’t rush it. Add the bloomed gelatin.
Combine everything. Pour into the mould. Refrigerate until set.

Bite through it. Ruby. Glossy. Pure summer ♥️
