Smoke, fire and a free glass of sherry! 🔥

From 2 to 7 November, everyone who orders our Head Chef Tasting Menu gets a complimentary glass of Fernando de Castilla Classic Dry Fino. Our kitchen is built around a charcoal grill, and that bone-dry, salty-crisp fino cuts straight through the char and smoke of every plate that comes off it. Pour, sip, then let the grill do the rest. 🍷

Our Tortilla Clásica, made at home 🔥🥔

This is the tortilla we serve at Ember Yard with and it only takes three ingredients:
1️⃣ Slice Agria potatoes thin, wash them and let them rest so the water comes out 2️⃣ Blanch them in a fryer until soft. An air fryer works at home too
3️⃣ Cook white onions slowly in good olive oil with salt, under a cartouche, until they're deep golden
4️⃣ Break up the potatoes, mix them with the onions, then add the beaten eggs. Use enough egg to bind it, but don't let it get too runny
5️⃣ Let the mix rest, then ladle it into a hot pan with extra virgin olive oil and push it in from the sides
6️⃣ Finish it in the oven, then flip it onto a plate

What you get is golden outside and soft and jammy in the middle. It's great warm, at room temperature, or straight from the fridge the next day.

Our signature rice, made at home 🔥🍚

This is the base behind one of our favourite dishes at Ember Yard, and it's simpler than you'd think:
1️⃣ Start with smoked paprika oil
2️⃣ Gently sweat onions and garlic. Don't let them brown, because that keeps them sweet
3️⃣ Add grated tomato, smoked paprika, salt and black pepper
4️⃣ Stir in the rice, then add b**r and let it reduce
5️⃣ Pour in a mix of beef and chicken stock
6️⃣ Bake in a shallow metal pan until all the liquid has gone

The result is a smoky, rich rice that's made for meat. Pair it with pork, chicken, turkey or beef.

One of the simplest dishes in Spanish cooking and one of the most delicious. Juicy, ripe tomatoes, good olive oil, and warm, toasted bread come together to create the perfect bite. Simple ingredients, treated with care, are often all you need.

Here's Ricardo's Pan Con Tomate recipe:

Ingredients
• 4 ripe vine tomatoes
• 1 garlic clove
• 50ml extra virgin olive oil
• 5g Maldon salt
• 1g black pepper
• 4 slices sourdough bread

Method
Grate the tomatoes into a bowl, discarding the skins.
Allow the grated tomatoes to sit in a fine sieve for 5-10 minutes, draining off any excess water.
Finely grate the garlic into the tomatoes.
Add the extra-virgin olive oil, Maldon salt, and black pepper.
Mix well until combined.
Toast the sourdough until golden and crisp.
Spoon a generous amount of the tomato mixture onto the warm toast.
Finish with a drizzle of extra virgin olive oil.
A handful of quality ingredients, a little patience, and you've got a classic Spanish staple that's perfect any time of day.
