Welcome to Episode 1 of The Pasta Diaries.

Our courgette spaghetti is easily a summer favourite, so we’re starting here.

For this one, we swap pine nuts for pistachios in the pesto. It gives the sauce a slightly sweeter flavour, something subtle, but enough to make the whole dish feel a little different.

For starters we have Fine de Mer Oysters with mignonette & lemon, Yuzu Scallops with lemongrass, celery & radish, Focaccina with 24-month aged Parma ham, whipped feta, honey & pistachio, and Aubergine Parmigiana finished with parmesan fondue and shaved Parmigiano Reggiano.
