SOMETHING MORE IMPORTANT

For this video, I wanted to focus my attention on the ever mounting difficulties the hospitality industry is facing.

I do hope that none of this comes across as whining, or gives off a “woe is me” type of vibe, as although things are difficult for us, I know there are venues who have it way worse, and that is what this is about; doing our part to help people understand what the industry is currently up against.

We’ve noticed just how difficult it’s been running a venue over the past few years, and at first we thought it may have just been us, but it’s now apparent that the issue is universal.

Most notably, people like Yotam Ottolenghi, , and Tom Kerridge to name a few - people who are at the top of their game are now saying how hard it is, and even some of their businesses aren’t turning a profit I think to myself, what does that say about the industry? No matter how good you are, how experienced you are, and how well your business is run, you are still going to struggle.

The industry is now campaigning for VAT to be brought down to similar levels seen in much of Europe, this is one thing that would give the industry room to breath. I have included a few of the big hitters which have created the perfect storm for the industry.

Alcohol duty = UK is highest in Europe for wine
VAT on Hospitality = UK is one of the highest in Europe
Business rates = UK is the highest in Europe
Energy = UK has the highest non-domestic energy in Europe

Michael Taylor of made a good video about people thinking they’re getting ripped off with a £5 pint - he broke down the costs, and by the end of it the venue was left with 13p in net profit.

We were losing 1 pub every day in 2025, now in 2026 that number is closer to 2 per day. Your favourite venue could be the months from closing - but it’s not the fault of the venue or their guests, it's the broken system that they have to deal with.

"WHAT'S THE COOLEST BOTTLE YOU'VE OPENED?"

This was asked recently, and I thought it was a great question, and one that others would appreciate.

Everyone will have their own opinion on this, but for me it was this pre-WWII 1939 White Horse, which was known for containing a fair whack of Lagavulin.

Was it the best whisky I have ever had? No, but it was probably the most thought provoking. Drinking this was making my mind wander...people harvested the grain for this whisky around a century ago, it was bottled months before WWII began, countries were born, countries changed, countless wars, different eras of music came and went; all the while this whisky sat in a dusty old bottle, and I wouldn't even be born for another 51 years after it was bottled.

People sealed this bottle 80 years ago, with the assumption that it would be drunk in the coming months, but the seal wouldn't be broken for another 80 odd years, and when it was it was by myself and the people in Liverpool Whisky Club.

It doesn't happen often, but trying something like this is an immersive experience. I should also add, the whisky was great!

TWO NEW DORNOCH RELEASES ON THE BAR!

These two new releases from arrived yesterday and have already been cracked. Going down a storm as you'd expect.

One is an 8 year old fully matured in an ex-Bourbon Octave and the other is a 6 year old fully matured in an ex-Oloroso Sherry Octave.

Both £12 a dram, which is a solid price as always!

WIREWORKS HERITAGE CHEVALIER BARLEY RELEASE

I've been really enjoying this one, and it's gone down a treat with our regulars. Made using a heritage variety of barley called Chevalier which was mostly used in whisky distillation between the 1820s and 1920s.

I do love that distilleries like are using heritage varieties, as getting down to producing high quality and interesting distillate is the most important thing IMO when it comes to whisky making.

On the nose we've got lots of buttery flapjacks, passion fruit, red apples, and dry hayloft. Moving onto the palate it's got a creamy and buttery mouthfeel, more flapjacks, sweet Madeira cake, Seville orange peel, and unlit cigar. It gets much drier and spicier finishing on long lasting flavours of lemon zest, white pepper, and tannins.

This one was matured in ex-Bourbon casks and is limited to 999 bottles. Very cool stuff. £8 a dram.

SMÖGEN 10 YEAR OLD ASKEIM FOR AQVAVITAE

I love Smögen, it's one of my favourite distilleries producing peated whisky. This one is a bit different than what they usually produce. Askeim is lightly peated as opposed to Smögen's typical heavily peated style, and uses 100% floor-malted Golden Promise barley. The casks used to make up this release were selected by the guys at and those casks were 3 quarter casks that previously contained Four Roses Bourbon.

Nose: buttery shortbread and flapjacks, toasted macadamias, silage (ferment-y, sweet, decomposing grass), gooseberry compote, almond and apricot pastries, and rich grist.

Palate: oily mouth feel, more buttery shortbread, jammy persimmon, grapefruit zest, and a little saline starting to creep in.

Finish: long, and this is where the peat comes in which is soft and dry, the saline ramps up, as does the grapefruit zest, and at the very tail end a touch of quinine/tonic water bitterness.

Lovely Smögen. Solid 8.5/10 from me.
