How it’s done:
Firstly, we lightly cure the trout in a 50/50 salt and sugar mix, washed and then thinly sliced >>
Shiitakes get roasted before getting brushed in a sweet tare for extra umami >>
Pickled cucumber cut through the fattiness of the trout and kefir which we split with a herb oil used from our waste herb stems >>
