There’s nothing quite like the smell of fresh bread baking in the morning, and it’s one of the first things guests will notice at The Peacock.

From 7.30am, our Dutch ovens are at work, and each day the process begins again with our starter, refreshed with flour from Pakenham Mill and water. Mixed at lunchtime and shaped into loaves each afternoon, it’s a daily routine in the kitchen that sits at the heart of what we do.

Mandrarossa Frappato from Sicily is light, bright and best served with a gentle chill. It’s packed with juicy red berry fruit, fragrant herbs and a refreshing finish.
