Tonight is one of those bittersweet nights at Montey’s.
After well over a decade behind the bar, we’re saying goodbye to our bar manager, Ethan—and it’s not an exaggeration to say he’s been part of the backbone of this place for years.
Ethan first walked through the doors with plenty still to learn, but what stood out straight away was the energy, the graft, and that natural way with people that you just can’t teach. Over time, whenever the moment called for it, he stepped up—again and again—until he wasn’t just part of the team, he was leading it.
If you’ve ever had a cocktail here that made you stop and go “that’s dangerously good”… there’s a fair chance Ethan had something to do with it. Some of the staples on our cocktail list started life in his hands. And if you’ve ever found yourself thinking “this playlist is unreal tonight,” that’ll be him as well—he’s been quietly (and sometimes not so quietly) shaping the sound and feel of Montey’s for years.
Of course, it wouldn’t be Ethan without mentioning sport. Any sport. All sports. If there’s a conversation happening about it, he’s either in it or about to be—and usually winning it.
He’s grafted, he’s grown, he’s helped shape what Montey’s is today, and somewhere along the way he became family.
Now though, the call of a slightly more reasonable bedtime has finally got through to him. So he’s taking some time for himself—and after everything he’s put into this place, it’s more than deserved.
Truth be told, if we’d been a bit stricter over the years, this goodbye might have come a lot earlier… but Col made the call that a bottle of grenadine over the head was the appropriate disciplinary action at the time—and in hindsight, probably the right one.
So tonight, we’d love to give him the send-off he deserves.

Good luck, Ethan. The early doors crowd are already lining up to have you sat with them instead of telling at least one of them to pipe down.
