🧄 Wild garlic layered tart case

💥 Green and white asparagus, peas, wild garlic and morels cooked in a butter/nage emulsion.

💨 Smoked cheese custard
🪺 Confit egg yolk puree
🧄 Wild garlic pesto
More vegetables
More custard
More egg
More pesto....

🌿 Then finished with wild herbs, flowers and shoots from the garden including, wild garlic of course, elder, marigold, nasturtium, mint, peashoots, marjoram.

🌱 Alongside a healthy dose of loose hollandaise sauce. Might be a vegetarian starter but this is as rich as it gets darlings. WE LOVE SPRING.
