P.S this Tuna was Line caught off the coast of Cornwall by our friends Wing of St Mawes ,this was a targeted and responsible method of fishing, rather than large scale net fishing. We knew exactly where the fish came from and who caught it, and used the whole fish from head to belly, minimising waste.

Responsible sourcing, full traceability and respect for the produce.

🚨☀️🎣 CORNISH BLUE FIN SASHIMI DUO 🎣☀️🚨

BRITISH TUNA SEASON HAS ARRIVED.

We call it… Mediterranean inspired sashimi.

BLUE FIN TUNA SASHIMI DUO, COMPRESSED MELON & JALAPEÑO & GORDAL OLIVE GAZPACHO DRESSING.

For the past 2 years, the king of the sea, blue fin tuna has been allowed to be line caught in British waters. Around 1200 tuna are allowed to be caught between now and the end of the season around November.

We work closely with our supplier Wing of St Mawes to bring you the finest quality blue fin we can to your FRIENDLY NEIGHBOURHOOD BISTRO in PONTCANTON.

We are proud to announce we are unofficially the official home of line caught blue fin in Cardiff.

This year we are serving this dish as a DUO. Always featuring 2 of the cuts between akimi, chūtoro & otoro. Each bringing their own flavour profile as seen below. We will always serve two cuts on this dish to allow you to see the contrast in texture and flavour.

We always torch one side of the ōtoro to allow the fat to melt and increase the buttery mouth feel. It’s the RIB EYE OF THE SEA.

We are serving this rich, buttery, melt in the mouth tuna with a fresh, zingy GREEN JALAPEÑO & GORDAL OLIVE GAZPACHO. Made up of our house gordal olives, olive brine, cucumber, jalapeño, courgette, lime & courgette.

We serve this with COMPRESSED MELON (juicy melons, super charged in their own juice & MELONADE)

Finished with EVO (extra virgin olive oil), shallots, peeled cucumber hunks & sliced gordals.

Served all through the rest of summer, come and get it.
