Forgotten Thursdays: The Singapore Sling

Women couldn’t drink in public in Singapore in 1915. Ngiam Tong Boon, head bartender at the Writers Bar Long Bar, found a clever way around it.

Singapore was under British rule then, and colonial etiquette decided what was proper in public. Only men were allowed to drink alcohol in open spaces, while women were limited mostly to tea or juice. A woman who broke that rule risked her reputation, and quite possibly her chances of marriage. Booooo

So he made a gin cocktail that looked like fruit punch. Bright pink, with pineapple and cherry, and nothing about it to suggest otherwise. The ladies got what they wanted. Nobody raised an eyebrow.

Forgotten Thursdays: The Tom Collins

Have you heard about Tom Collins? Before he was a cocktail, he was a rumour.

It began as the John Collins, a gin punch from the headwaiter at Limmer’s Old House in London. It traces its roots to the gin and tonic obsessed 19th century. By 1869 it was in print, made with sweet Old Tom gin.

Then came 1874. A friend would lean in and say, “Tom Collins is in the bar around the corner, talking about you behind your back.” So off you went. Bar to bar, fists ready. Every bar sent you to the next one. Newspapers printed fake sightings. The man was never there.

By the end of the night, you’d had a few drinks. Eventually, the bartenders gave the drink his name.

Forgotten Thursdays: The Gimlet

A sailor’s classic with a sharp edge.

The Gimlet’s story goes back to the British Royal Navy in the 19th century, when sailors drank lime juice to help prevent scurvy on long voyages. Gin was added to make it more palatable, and the Gimlet became a staple. Some credit naval surgeon Sir Thomas Gimlette with popularising the drink, while others trace it to the sailors themselves.

Forgotten Thursdays: The Americano

The grandfather of the Negroni.

It started in Italy as the Milano-Torino, Campari from Milan and sweet vermouth from Turin, lengthened with soda. American tourists drank it through Prohibition and the name stuck. In 1919, Count Negroni asked for his stronger and gin replaced the soda. Bond orders the original in Casino Royale, with Perrier.

Light, bitter and made to open a meal.
