For our Liguria Lunedì Regionale coming up on March 23, we couldn’t go past a true Ligurian classic: Pansotti con salsa di noci.

A traditional filled pasta from Liguria, pansotti are generously stuffed with ricotta and wild greens like chard, dandelion and chicory. The pasta is then tossed in the region’s iconic walnut sauce — a silky blend of bread, milk, garlic, marjoram and walnuts. To finish, we top it with walnuts toasted in butter and rosemary for a rich, aromatic crunch.

A comforting dish that captures the rustic elegance of Ligurian cooking.

With our Puglia Lunedì Regionale coming up, we couldn’t skip this Bari specialty. It’s a hearty one-pot, layered baked dish made with rice, potatoes, and mussels. Traditionally, it’s cooked in a pot called a tiella. The ingredients are layered and slowly baked in an aromatic liquid of fish stock, white wine, and mirepoix, allowing everything to meld together into something deeply comforting and savoury.
