Seeing the place full today, watching people slow down and actually enjoy their afternoon… that's exactly what this was about.

Perth hospo is doing it tough right now. Between cost of living and supplier pressure, we wanted to create something that felt genuinely accessible without cutting a single corner on the seafood. Today showed that's exactly what people needed.

The team absolutely delivered. Every plate off the pass was something to be proud of!

To everyone who came down, thank you. You made it worth it.

~ Crushed olives, whipped riccotta, fennel, basil

~ Albany Flathead, caper & currant agrodolce, squash

Crushed olives, ricotta, fennel and basil - our take on 'schiacciate', a seasonal dish at Madas.

Adam's been picking jumbo kalamata olives from our landlord's house for three years now; her nonna brought the seeds over from Calabria 70 years ago.

The olives get crushed and washed daily for 10 days to lose their bitterness, then get marinated in a mix that's herby, spicy, sweet and salty. Ricotta's whipped up with salt, lemon zest, pickled fennel and baby basil.

This dish might just be a Perth exclusive.
