We always love a call from a fellow creative inspired artisan, this time Micah told us he had some freshly pressed Gamay skins (from Macedon) for us.

Literally in GLAD bags, hence the name, we took the freshly pressed skins and put them atop a freshly brewed low alcohol table wild ale in our open barrels.
There we allowed the ale and skins to open ferment using the native grape’s yeasts and microbes to allow the grapes’ provenance to shine through… allowing the skins to sit in the open fermented barrel for 14 days to extract a beautiful pink tone into the ale. It was then barrel aged to allow the fermentation to complete in Burgundy French oak, to allow for the extraction of some mild French oak tannins from the barrel.
The result … stunning 😍

6 courses matched each to a beer🍻 AND a wine 🍷 and two of Victoria’s respected makers in their fields, Costa Nikias from La Sirène and Micah from will guide you through each creation and inspiration whilst you navigate a delicious feast put together by La Sirène’s Andy 👨🍳 and team in the kitchen. It’s going to be an EXPERIENCE 🥰

Slow cooked beef short ribs w soft polenta & red wine jus.
