From the trap to our tables. 🦞🌊

What a special day with our teams from , , and .dc at Lobster Maine-ia (), getting a behind-the-scenes look at the passion, craftsmanship, and family tradition that brings some of the finest seafood to the DC area.

Meeting the Kenna family and seeing firsthand the care that goes into every lobster, scallop, and fillet was such a cool experience, and a reminder that great ingredients begin long before they reach our kitchens.

We’re grateful to work with people who care as deeply about quality, sourcing, and hospitality as we do.

Every morning, we bake our choux au craquelin fresh for service.

The shell is crisp, light, and buttery, split and soaked in an espresso, black cocoa, and amaro syrup inspired by tiramisu. Inside is a dark chocolate ganache, finished with whipped mascarpone cream.

A little French pastry technique, a little Italian flavor, and one of our favorite desserts on the menu right now. 😉
