Meet Chef David Schmidt! If you’ve dined in Sedona over the last 20+ years, there’s a good chance you’ve already experienced his work. Chef David previously led the kitchens at places like L’Auberge de Sedona, Enchantment Resort, and Mii Amo — building a reputation for thoughtful, ingredient-driven cooking and memorable dining experiences.

But his story actually started long before any of that.

Growing up, he learned to cook beside his grandmother — the kind of kitchen where bread was always baking, butter was always fresh, and the table was where everyone gathered.

That idea has stayed with him ever since: good food is meant to bring people together.

Since joining Cowboy Club this winter, Chef David has been quietly bringing that same philosophy into our kitchen — refining dishes, focusing on quality ingredients, and even helping transition the menu to be completely seed-oil free.

With his experience in Sedona’s culinary scene, and Cowboy Club’s long-standing place in Sedona history, it feels like a natural fit.

Next time you’re in, just know there’s a chef behind the scenes who truly believes in cooking food that connects people and makes you feel at home at the table.

And around here… that’s exactly what we’re about. We can’t wait for you to come try the new menu items and what we’ve been working on 🤎
