Arizona Shrew -
Irish Vodka
Pineapple
Lychee
Lemon
Ch*****ne

A playful modern take on a French 75 (or 76 rather) pairing a clean Irish vodka with a slightly delicate and sweet lychee liqueur. Brightened up by lemon and ch*****ne for an effervescent lift. Vibrant blend of fruit and bubbles balanced nicely and house carbonated to keep that sharp ch*****ne bubble through-out the entire drink!

Bobcat -
Mixto Tequila
Lime Cordial
Bergamont
Seven Chili Tincture

Our take on a margarita. We use Lost Lore Tequila mixto here that
Is higher proof and brings the sweetness to balance out
Our Bergamont lime cordial. With a seven chili blend we
Distill from Jalapeño, Ancho, Poblano, Serrano, Habanero,
Guajillo and Pasilla. By distilling them, you lose the heat and
Are left with the vegetal green and Smokey notes adding
Only those flavors to the cocktail! We finish this with burnt
Orange oils which adds saltiness that enhances the flavors
Of both citrus and the tequila!

Ring Tailed Cat -
Roulette Rye
Capeletti Vino
Barbadillo Cream Sherry
Sweet Vermouth
Coffee
Malta Goya
House Carbonated to 45PSI

An idea that came from a boulevardier meets a manhattan with a little caribbean twist. We first build our cocktail, then, sous vide the entire batch with coffee bean for 2 hours. To finish the cocktail we add in Malta Goya soda, then bring it down to a temperature (20 degrees) that allows us to infuse it with co2 in house!

Long Tailed Weasel -
Pisco
Guajillo Pepper
Guava
Elderflower
Cascadia Bitter
Lemon
Lime

This tropical twist on a Pisco Sour adds a little extra structured bitterness and floral sweetness, with guajillo pepper adding a slight heat into the mix!
FUN FACT:
We do not use egg whites behind our bar, so instead, we use a plant derivative added into our entire cocktail to add the same velvety texture and even out the citrus on the palate.
