Thank you to the Peoria Heights Chamber of Commerce for the warm welcome to the neighborhood.

A ribbon feels like a good moment to make one thing clear — Rosie’s is open to everyone. No membership needed and walk-ins are always welcome.

Riveters members just have a few more reasons to: 15% off the whole tab, 25% off bottles to go, and four pickups a year. But the wine list, the small plates and the patio are for the whole neighborhood.

Tomorrow, we unlock our doors……

Over the past several weeks, you’ve watched us build something from the ground up. You’ve been patient as we learned, adjusted, trained, celebrated the wins, and worked through the challenges that come with creating something new. Every soft opening, every kind word, every piece of feedback, every hug, every shared glass of wine has helped shape Rosie’s into what it is today.

Todd and I have been truly humbled and overwhelmed by the love this community has shown us. What began as a day dream has become something far greater than we ever imagined because of all of you.

To our incredible staff—you believed in us before the doors officially opened. You’ve poured your hearts into learning our vision, supporting one another, and creating the kind of hospitality that can’t be taught. You’ve become more than a team; you’ve become family.

To our friends and families—thank you for believing in us when this was nothing more than conversations around the kitchen table. Thank you for encouraging us through the long days, late nights, endless decisions, and moments when the finish line seemed just out of reach.

And to every guest who has already walked through our doors, whether for a sneak peek, a soft launch, or simply to cheer us on: you’ve made this place feel alive. We no longer see you as customers. We see you as friends. As neighbors. As part of the Rosie’s family.

Our hope has never been simply to serve wine. We hope to create a place where people gather, celebrate life’s milestones, find comfort after difficult days, make new friends, reconnect with old ones, laugh a little louder, linger a little longer, and leave feeling like they belong.

That is what Rosie’s has always been about.

As we officially open our doors tomorrow, we do so with hearts full of gratitude. Thank you for your patience. Thank you for your trust. Thank you for believing in this dream alongside us.

Here’s to beautiful conversations, unforgettable evenings, countless celebrations, and a lifetime of memories made within these walls.

What a night.

Our first soft launch exceeded every expectation, and we’re so grateful to our club members and friends who joined us, offered feedback, and helped shape the Rosie’s experience.

We’re just getting started. Members-only soft launches will continue over the next week as we put the finishing touches on everything.

Meet Emily, our chef — a Peoria native who left to study culinary arts in St. Louis, came back inspired, and made a name for herself with Canterbury Creations. Now she’s ready to bring something new to the Heights. We’re lucky she landed here.
