When we started designing our new brewery in Castroville, there was a sea of decisions to make. But when it came to what would sit at the heart of it, we knew what we wanted.

After more than a decade of commercial brewing experience on robust, but manual systems, we decided to kick it up a notch. And when our founder J.C. Hill drank the proverbial kool-aid (or a s**t load of Helles in reality) during his time at Doemens Academy in Munich, we had a pretty damn good idea of what we wanted out of our next brewhouse and immediately sought out BrauKon.

Designed and built in Bavaria, BrauKon has an obsessive focus on wort quality, precision and efficiency. They call the brewhouse the heart of the brewery and sum up their approach simply: “The best quality wort for the best quality beer.” With a bit of luck, we sourced our dream system from another brewery and were able to work with BrauKon to customize every part of the process, and of course put the entire thing together - which started in late May and culminated last week. And now, our BrauKon system will be with us for years to come.

Our 50 BBL / 60 hL (sorry, 58.67 hL) system gives our brewers an entirely new level of control and flexibility. From more precise mashing and lautering to gentler wort boiling, greater recipe control and better extraction from the ingredients going into every batch, there is a whole lot of thoughtful engineering hiding underneath all that shiny stainless. Our new cereal cooker (and decoction vessel!) also opens the door to a wider range of specialty grains and raw materials, something we’re particularly excited about as we look to work with more local maltsters and ingredients closer to home.

We’ve spent the last 12+ years figuring out how we like to make beer, and this is a major step in the next chapter of Alvarado Street. We also wanted this thing to feel unmistakably Alvarado. Each of the manway glasses carries a piece of our history, pulling from beers, artwork and moments that helped get us here. And with Biggie at the helm of this beautiful Bavarian beast, we couldn’t resist a little play on words.

Cans vs. draft? 🥫🍺🤔

Our hands are a little forced with the canning line out of commission, but Wade, head brewer at the Monterey Brewpub, makes a pretty compelling case for draft beer. Right now we’ve got a couple draft only batches that would normally be in cans, and they’re tasting pretty damn incredible.
