🌊🥃 F-RYE-DAY — TRIED & TRUE CONTINUES 🥃🌊
Tonight we’re taking a turn with Noble Oak Double Oak Rye, finished with port wine oak staves.
This one doesn’t show up quietly. The nose starts with brown sugar, caramel and oak, then the rye brings some grassy, peppery character to the party. On the sip, you get sweet oak, maple and dark fruit, with fig, cherry and a solid rye spice building underneath.
That port-finished oak adds another layer without completely taking over the rye. At 96 proof, it has enough punch to keep things interesting while still going down surprisingly easy.
Tried & true week continues—and this rye definitely brought its own personality to the grotto. 🥃🌊

🥃 THROWBACK THURSDAY — WHERE IT ALL BEGAN

Every collection has a first bottle.
Every journey has a starting point.

For us, it was Gentleman Jack.

Long before we were chasing allocated bottles, comparing barrel proofs, hunting down unicorns and filling the shelves of the grotto, this was the bottle that got us started.

A little vanilla. A little caramel. Soft fruit with hints of apple and banana, mellow oak and that familiar char. Smooth, approachable and easy to sip. Nothing complicated—just a solid whiskey that made you want to pour another.

And looking at the bottles we have today, it’s pretty wild to think that this is where it started.

We’ve definitely come a long way from that first pour… but we haven’t forgotten the bottle that started the journey.

Some bottles are valuable because they’re rare.

Some are valuable because they’re where the story began.

From that very first whiskey sour with Gentleman Jack to where we are now… the elevated whiskey sour has come a long way. 🥃🌊

What started as a simple classic has turned into a cocktail we’ve learned to refine, balance, and make our own. Same foundation, better technique, better ingredients, and a whole lot more experience behind the bar.

🌊 Tide Turn Tuesday — Tried & True

The Tried & True week continues with a bottle that has earned its place on the shelf: Woodford Reserve Double Oaked.

It’s a little pricier than your everyday pour, but this is one of those bottles where you know exactly why you’re paying a little more. Double-barreled maturation brings forward dark fruit, caramel, vanilla, toasted oak, chocolate, hazelnut and honey, with a smooth, creamy finish that keeps you coming back.

The oak is definitely part of the experience, but the sweetness keeps it balanced. Think rich caramel, vanilla, dried fruit, dark chocolate and toasted oak in a pour that’s easy to sip and hard to overlook.

Not the rarest bottle. Not the loudest bottle.
Just a damn good staple that deserves a spot in the selection.

Mermaid Monday kicks off our Week of Tried & True Bottles — the bottles that have earned their place on the shelf and never need an introduction.

Tonight, it’s Wild Turkey 101. A classic for a reason. At 101 proof, it brings plenty of character without needing a fancy label. Caramel and vanilla lead the way, followed by toasted oak, orange peel, and that unmistakable rye-driven peppery spice. There’s a sweetness underneath the heat, with a lingering finish of oak, citrus, and spice.

It’s bold enough to sip, dependable enough for an Old Fashioned, and versatile enough to keep reaching for.

Some bottles are trendy. Some bottles are rare.

And then there are the tried and true bottles that everyone should have on their shelf.
