Aroma of red apple skin and cooked apples. It's "curious" to drink. Slightly sweet. A somewhat light cider, but with a complex "fruit salad" full of flavors and spices, and a slightly velvety mouth feel that gives way to a perfect gentle astringency after a few seconds. The effervescence has always been nice - notice the bubbles and foamy head. Medium-low acidity. Mild bitterness and tannins in the aftertaste. It's strange enough to not be for everyone, but many customers have gravitated towards it, and I find it quite easy to enjoy slowly and savor. This is one of the three "fancy French apples" from Brightonwood Orchards that Charles down in Burlington () was kind enough to sell me a few bushels of. It's a very small batch so come try some on tap before it gets stashed.

Frequin Rouge (4.2% ABV)

Some apple enthusiasts have said this is their favorite cider apple. My nose will never forget the day I pressed them. I said "WOW!" at the floral explosion. The aroma now: BUBBLE GUM! It carries through to the flavor as well. A new cider customer said "Bubbalicious" yesterday. Also quite complex. Fruit salad. Several levels of spice in the aftertaste. Accompanying the sweetness is a decent amount of bitterness and tannin. Medium astringency. Med-low acidity. It's a very small batch so come try some on tap before the remainder gets stashed away in the cache.

Muscadet de Dieppe (4.5% ABV)

An apple named after a city in Normandy which the French government allows cidermakers to make Norman cider with. This cider is actually two ciders. One batch uses my go-to yeast. The other batch is a wild batch - possibly my first ever attempt at the cidery - as a nod to French regulations. The former is drier and more banana-leather, while the latter is sweeter but quite shrubby. Try both if you are curious to taste the difference. Cidermaking always presents adventures for you to experience!

Come visit the tasting room this weekend (12-9 Sat, 12-6 Sun). New merchandise is in so come get first pick on hats, hoodies and shirts!
