Aroma of red apple skin and cooked apples. It's "curious" to drink. Slightly sweet. A somewhat light cider, but with a complex "fruit salad" full of flavors and spices, and a slightly velvety mouth feel that gives way to a perfect gentle astringency after a few seconds. The effervescence has always been nice - notice the bubbles and foamy head. Medium-low acidity. Mild bitterness and tannins in the aftertaste. It's strange enough to not be for everyone, but many customers have gravitated towards it, and I find it quite easy to enjoy slowly and savor. This is one of the three "fancy French apples" from Brightonwood Orchards that Charles down in Burlington () was kind enough to sell me a few bushels of. It's a very small batch so come try some on tap before it gets stashed.
